Mandarin Poppy Seed Cake

Aromatic mandarins add a fragrant zing to this buttery poppy seed cake. You will need 4-6 mandarins for this recipe, depending on their size.

Makes:

1 loaf

Prep Time: 20 minutes

Cooking Time: 35-40 minutes

Ingredients

  • 180g butter, softened
  • 3/4 cup caster sugar
  • 2 teaspoons grated mandarin or orange rind
  • 3 eggs
  • 1 3/4 cups self raising flour
  • 2 tablespoons poppy seeds
  • 3/4 cup milk
  • 1/3 cup mandarin or orange juice
  • MANDARIN ICING
  • 1 cup pure icing sugar, sifted
  • 2 tablespoons mandarin or orange juice
  • sliced mandarin, for garnish

Method

  • Using an electric mixer, beat butter and mandarin rind until soft and creamy. Gradually beat in eggs, then fold in flour, poppy seeds, milk and mandarin juice.
  • Spoon into a buttered and lined 20cm x 10cm x 7cm loaf pan and bake at 180°C for 35-40 minutes until golden and cooked when tested.
  • Turn out onto a cooling rack, allow to cool and drizzle with icing and garnish with mandarin slices.
  • MANDARIN ICING Combine icing sugar and mandarin juice in a metal bowl, mixing until smooth. Warm over a saucepan of simmering water to thin the icing if required, before drizzling over the cake.
