Spiced BBQ Chicken
This whole butterflied chicken is rubbed with spices and cooked on a smoker bbq (Traeger grill) but you can cook it on a covered gas bbq too.

Cooking Time: 45 minutes
Ingredients
- 1 large free range chicken (1.9 kg)
- juice 1 lemon
- SPICE RUB
- 2 tablespoons brown sugar
- 1 tablespoon mustard powder
- 1 tablespoon smoked paprika
- 1 tablespoon lemon pepper
- 2 teaspoons garlic powder
- 2 teaspoons ground cumin
- 2 teaspoons sea salt
Method
Combine all the ingredients for the spice rub together. Using a sharp cooks knife, remove the backbone by cutting down on one side of the backbone of the chicken the the other, and open out, skin side up, flattening with the heel of your hand. Tuck the tips of the wings underneath the body of the chicken. Rub with half the lemon juice and completely coat with the spice rub. Preheat the bbq to 230°C, place the chicken directly on the grill and cook covered for 30-40 minutes until the internal temperature of the thickest parts are at 72°C (you will need a digital probe thermometer). Remove, cover with foil and allow to stand for at least 10 minutes before serving.
Tips
Spring onions can be coated with oil, seasoned with salt and chargrilled for 5 minutes to serve on the side.
