Scrambled Eggs with Smoked Salmon and Dill
Easy like Sunday Morning....

Ingredients

  • 2 large free-range eggs
  • 2 tablespoons cream
  • 1/2 teaspoon sea salt
  • 1 tablespoon butter
  • 2 slices smoked salmon
  • 1 teaspoon chopped dill
  • 1/2 spring onion, chopped
  • 1 slice ciabatta bread, toasted
  • freshly ground black pepper, to taste

Method

Top toasted ciabatta with smoked salmon, leaving some for garnish. Lightly beat eggs, cream and salt together. Melt butter in a non-stick frypan over medium heat. Add eggs and stir occasionally, in a slow folding motion, over medium to low heat until soft curds form. Remove from heat while eggs are still undercooked as they will continue to cook. Spoon onto salmon, top with reserved salmon and serve sprinkled with dill, spring onions and pepper.

Tips

This recipe is written for one, but it is very easy to multiply accordingly. For the scrambled eggs, just remember it’s one tablespoon cream and a pinch of salt for each egg!
