Banana Date Cake

Quick to make, this little cake is a sweet and sticky combo of banana and date.

Makes:

1 x 20cm square cake

Prep Time: 20 minutes

Cooking Time: 30 minutes

Ingredients

  • 200g pitted dates or prunes, chopped
  • 1 1/2 cups milk
  • 1 teaspoon vanilla essence
  • 50g butter
  • 3 eggs
  • 1 cup raw sugar
  • 1 1/4 cups self raising flour
  • 1 teaspoon cinnamon
  • 1 large banana, cut into 16 slices

Method

Simmer dates, vanilla, milk and butter together for 5-10 minutes, until soft and the consistency of jam (mixture may appear curdled). Mix eggs and sugar together, fold in date mixture, flour and cinnamon. Pour into a buttered and lined 20cm square tin or 22cm round. Arrange banana slices on top and sprinkle with extra raw sugar. Bake at 180°C for 25-30 minutes until golden brown and firm to the touch. Serve cut into squares.
