Birthday Pancake Stack
Start someone's birthday morning off with a bang with this giant pancake stack.
Serves:
6

Cooking Time: 30 minutes
Ingredients
- 4 cups self-raising flour
- 2/3 cup caster sugar
- 3 cups milk
- 2 eggs
- 1 tablespoon vanilla extract
- butter, for frying
- 400g chocolate hazelnut spread
- 1 punnet strawberries, halved
- 1 punnet blackberries
- 1 punnet raspberries
- chocolate shavings, for garnish
Method
Combine flour and sugar together in a bowl. Whisk milk, egg and vanilla together. Make a well in the centre of the flour, add milk mixture and whisk until smooth. Heat a frypan with a knob of butter, swirling to coat the base of the pan. For each giant pancake, add 1 cup batter to the buttered pan and cook covered over low-medium heat for a 3-5 minutes until bubbles form on the surface and the underside is golden brown. Flip over and cook uncovered for a further few minutes until golden underneath. Allow to cool on a wire rack. To assemble the stack, spread each pancake with chocolate hazelnut spread and layer with berries. It is helpful to secure the stack using cake decorating
