- 2 tablespoons honey
- 1 egg
- 2 cups plain flour
- 1/2 teaspoon baking powder
- 1/2 cup (50g) ground almonds
- TOPPING

- 2 tablespoons caster sugar
- 1/4 cup honey
- 150g flaked almonds
Method
- Beat butter, icing sugar and honey together until light and creamy. Beat in egg. Stir in flour, baking powder and ground almonds to form a soft dough. Quickly spread over pastry base using a spatula or the back of a spoon. Bake at 180°C for 10-15 minutes until golden brown. Allow to cool. Cut into 36 fingers. Store in an airtight container.
- VARIATION Substitute chopped macadamias or hazelnuts for almonds.
Tips
- TIP Take care when working with the almond toffee as it is very hot.
- STYLING To cut into even pieces, make 3 equal cuts across the length of the slice and 12 cuts horizontally.
