Butterscotch Almond Slice

These buttery fingers of nutty almond slice are just the perfect sweet treat with a cup of tea.

Makes:

36 pieces

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 150g butter, softened
  • 2/3 cup icing sugar
  • 2 tablespoons honey
  • 1 egg
  • 2 cups plain flour
  • 1/2 teaspoon baking powder
  • 1/2 cup (50g) ground almonds
  • TOPPING
  • 125g butter
  • 2 tablespoons caster sugar
  • 1/4 cup honey
  • 150g flaked almonds

Method

  • Beat butter, icing sugar and honey together until light and creamy. Beat in egg. Stir in flour, baking powder and ground almonds to form a soft dough. Using floured fingers, press evenly into a buttered Swiss roll tin (25cm x 38cm, or similar). Bake at 180°C for 10-12 minutes or until lightly golden on edges.
  • To make the Topping, melt butter, honey and sugar in a saucepan. Simmer for 3-5 minutes or until just golden in colour. Stir in almonds. Quickly spread over pastry base using a spatula or the back of a spoon. Bake at 180°C for 10-15 minutes until golden brown. Allow to cool. Cut into 36 fingers. Store in an airtight container.
  • VARIATION Substitute chopped macadamias or hazelnuts for almonds.

Tips

  • TIP Take care when working with the almond toffee as it is very hot.
  • STYLING To cut into even pieces, make 3 equal cuts across the length of the slice and 12 cuts horizontally.
