Chargrilled Jamon Prawns with Mojo Verde
Tasty and elegant, these are crowd-pleasing passarounds.

Ingredients
- 12 green jumbo king prawns in shell
- 12 skewers
- 4 slices jamon or prosciutto
- extra virgin olive oil, as needed
- coriander leaves and lime wedges, for garnish
- MOJO VERDE
- 1/2 cup roughly chopped coriander and stalks
- 1-2 fresh Jalapeño or green chillies
- 1 clove garlic, peeled
- 1/2 teaspoon ground cumin
- 1/2 teaspoon sea salt
- grated rind and juice of 1 lime
Method
- Shell and devein prawns, leaving tails intact. Thread tail first onto skewers. Cut each jamon slice into 3 long strips and use the jamon strips to wrap around each prawn. Drizzle with oil. Chargrill or barbecue for 1-2 minutes on each side until jamon is charred and prawns are just cooked. Serve drizzled with Mojo Verde and garnish with extra coriander and lime wedges.
- MOJO VERDE Blend all the ingredients for the Mojo Verde, except the lime juice, and 1/4 cup olive oil, to a paste in a small blender. Add as much jalapeño as suits your taste. Just before serving, mix in 1 tablespoon lime juice and season to taste.
Tips
Use blanched asparagus spears in place of prawns.
