Chocolate Chip Cookie Brownies
Is this the world's first Chocolate Chip Cookie Brownie recipe?!
Makes:
20 squares
Prep Time: 10 minutes
Cooking Time: 20-25 minutes
Ingredients
- 125g butter, cubed
- 180g dark chocolate, broken into pieces
- 1 cup caster sugar
- 2 teaspoons vanilla essence
- 2 eggs
- 1 cup plain flour
- 4 store-bought choc chip cookies
Method
Butter and line a 20cm x 30cm slab tin with baking paper. Preheat oven to 180°C. Combine butter and chocolate in a microwave-safe bowl and melt in the microwave for 2 minutes on Medium. Stir until smooth and mix in sugar, vanilla and eggs. Gently fold in flour until mixed in. Pour into the tin and smooth the surface. Break cookies into pieces and insert into the brownie mixture. Bake for 20-25 minutes until the top is just firm to the touch. Allow to cool in the tin. Cut into 20 squares. Store in an airtight container.
Tips
* Substitute cookies with chunks of chocolate, nuts or choc chips.
