Coconut Milk Scones

A quick and easy scone mix that just happens to be dairy-free. They are best served fresh from the oven.

Cooking Time: 12 minutes

Ingredients

  • 3 cups self raising flour (plus extra)
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 400g coconut milk*

Method

  • Mix flour, sugar and salt together in a bowl. Make a well in the centre and lightly mix in the coconut milk to form a soft dough. Turn onto a floured surface and gently form into a round, adding more flour if the dough is sticky and taking care not to overknead. Use a floured scone cutter to cut into scones. Place on a floured oven tray. Using the leftover coconut milk that is inside the can and a pastry brush, brush the tops of the scones with coconut milk. Bake in the upper half of the oven at 220°C for 10-12 minutes until golden brown. Serve with jam and/or cream.
  • * Do not immediately discard the can as the leftover coconut milk inside is used to brush the scones!
