Corn Fritters with Smoked Trout and Avocado

Fresh corn really does make a difference in these tasty fritters. Top them with whatever you like!

Cooking Time: 10 minutes

Ingredients

  • 1 large corn on the cob*
  • 1 spring onion, chopped
  • 2 large eggs
  • 1/4 cup self raising flour
  • 1 teaspoon salt
  • 1 tablespoon chopped dill
  • 200g smoked trout fillet or smoked salmon
  • 1 avocado, diced
  • 1 lime
  • Oil, for shallow frying
  • mayonnaise, for serving

Method

Steam, boil or microwave corn cob until tender and remove kernels with a sharp knife. Combine with spring onion, eggs, SR flour, salt and dill. Shallow fry tablespoons of mixture in hot oil until golden on both sides. Drain on paper towel. Serve topped with smoked trout, avocado, a squeeze of lime and a dollop of mayonnaise. Garnish with extra dill.

Tips

* You can substitute 1 1/4 cups canned corn kernels
