Duck Fat Kipfler Potatoes

Lovely nutty little kipflers are extra delicious when roasted in duck fat!

Serves:

4-6

Prep Time: 10 minutes

Cooking Time: 30 minutes

Ingredients

  • 1 kg baby kipfler potatoes, scrubbed
  • 1/2 cup duck fat, melted
  • 4 cloves garlic, unpeeled, smashed
  • sea salt and freshly ground black pepper, for sprinkling
  • fresh thyme or rosemary sprigs, for garnish

Method

Score the potatoes in a spiral motion all the way around the body. Toss with duck fat and garlic on a dark oven tray. Season and roast at 200°C for 30 minutes, shaking the tray occasionally, until golden brown and tender. Serve garnished with thyme sprigs.
