Fennel and Walnut Slaw with Horseradish Dressing

Change up your slaw game with the addition of fennel, walnuts and horseradish.

Serves:

4-6

Prep Time: 15 minutes

Ingredients

  • 1 bulb fennel, finely shaved, fronds reserved
  • 2 carrots, peeled and grated
  • 2 spring onions, chopped
  • 1/2 cup chopped continental parsley
  • 1/2 cup walnuts
  • sea salt and freshly ground black pepper, to taste
  • HORSERADISH DRESSING
  • 2/3 cup egg mayonnaise
  • 2 tablespoons horseradish
  • 1 tablespoon lemon juice
  • 2 teaspoons sugar

Method

  • Toss fennel, carrot, spring onions, parsley, half the walnuts and Horseradish Dressing together in a large bowl and season to taste. Serve garnished with fennel fronds and remaining walnuts.
  • HORSERADISH DRESSING Shake all ingredients together in a screwtop jar and season to taste.

Tips

  • Use a mandolin or a food processor to finely shave the fennel.
  • STYLING Pile the slaw high on a serving plate and finish with walnuts and fennel fronds.
  • DRINK Sauvignon Blanc
