French Boulangere Potatoes
Tender-hearted yet crispy, these French-style potatoes are a wonderful accompaniment to any roast.
Serves:

Prep Time: 20 minutes
Cooking Time: 45 minutes
Ingredients
- 1.5 kg potatoes (Royal blue)
- 3 large golden shallots or baby onions
- thyme sprigs
- 1 1/2 cups chicken stock
- 75g butter, cubed
- sea salt and freshly ground black pepper, to taste
Method
Peel and slice potatoes and shallots as thinly as possible. Arrange potatoes standing up in a roasting dish, and tuck shallots and sprigs of thyme in between the layers. Pour over stock and cover with foil. Bake at 200°C for 50 minutes until potatoes are tender. Remove foil and grill fo 10-15 minutes until golden brown. Sprinkle with salt and pepper and serve garnished with thyme.
Tips
- After the potatoes have been baked until tender, they can be refrigerated and reheated and grilled prior to serving.
- The Boulangere potatoes can also be topped with parmesan or grated cheddar and grilled until golden.
