French Boulangere Potatoes

Tender-hearted yet crispy, these French-style potatoes are a wonderful accompaniment to any roast.

Prep Time: 20 minutes

Cooking Time: 45 minutes

Ingredients

  • 1.5 kg potatoes (Royal blue)
  • 3 large golden shallots or baby onions
  • thyme sprigs
  • 1 1/2 cups chicken stock
  • 75g butter, cubed
  • sea salt and freshly ground black pepper, to taste

Method

Peel and slice potatoes and shallots as thinly as possible. Arrange potatoes standing up in a roasting dish, and tuck shallots and sprigs of thyme in between the layers. Pour over stock and cover with foil. Bake at 200°C for 50 minutes until potatoes are tender. Remove foil and grill fo 10-15 minutes until golden brown. Sprinkle with salt and pepper and serve garnished with thyme.

Tips

  • After the potatoes have been baked until tender, they can be refrigerated and reheated and grilled prior to serving.
  • The Boulangere potatoes can also be topped with parmesan or grated cheddar and grilled until golden.
