Gigi’s Lemon Delicious Croissant Pudding

A quick, easy and delicious croissant pudding made with the help of my little cousin, Gigi.

Serves:

4-6

Prep Time: 15 minutes

Ingredients

  • 4 croissants
  • 350g jar lemon curd or lemon butter
  • 4 eggs
  • 2 cups whole milk
  • 1/2 cup cream
  • 2 tablespoons caster sugar
  • icing sugar, for dusting
  • cream or ice cream, for serving

Method

  • Cut the croissants in half horizontally. Spread with lemon curd and sandwich back together. Cut into slices and arrange in a baking dish.
  • Lightly whisk together eggs, milk, cream and sugar with a fork. Pour over croissants. Allow to stand for at least 10 minutes or up to one hour.
  • Bake at 180°C for 20 minutes until custard has set.
  • Dust with icing sugar and serve with cream or ice cream.

Tips

VARIATIONS Use chocolate hazelnut spread, biscoff spread or jam in place of lemon curd for a different flavour.
