Gingerbread

Gingerbread
A quick mix gingerbread that can be shaped as you fancy.

Makes:

60 biscuits

Prep Time: 1 hour

Cooking Time: 10 minutes (per tray)

Ingredients

  • 125g butter, softened
  • 1/2 cup dark brown sugar
  • 2/3 cup golden syrup
  • 2 1/2 cups plain flour
  • 3 teaspoons ground ginger
  • 3 teaspoons mixed spice
  • 1 teaspoon bicarbonate of soda

Method

Beat butter and sugar together in a bowl, using a wooden spoon and mix in golden syrup, until smooth. Fold in flour, spices and bicarbonate of soda and mix, kneading by hand on a lightly floured surface, to make a soft dough, adding extra flour if needed. Refrigerate for 30 minutes. Divide dough into 4 and, working with one piece at a time and keeping the rest refrigerated, roll out to 2 mm thickness and cut into shapes. Bake at 200°C for 8-10 minutes until golden brown. Allow to cool on a wire rack. Ice and decorate as desired.

Tips

Ready to pipe icings and a variety of cake decorations and sprinkles are now available in most supermarkets to decorate the biscuits.
