Honeyed Brussels Sprouts with Almond and Dijon Dressing

A much-maligned vegetable, the secret to tasty Brussels sprouts is to caramelise them until they're golden, stopping when they are just tender and still bright green. A drizzle of honey makes them shine, and a sprinkle of toasted nuts never goes astray.

Cooking Time: 15 minutes

Ingredients

  • 500g Brussels sprouts
  • sea salt and pepper, to taste
  • honey, for drizzling
  • 1 tablespoon toasted slivered almonds
  • fresh thyme, for sprinkling
  • curry powder, for sprinkling (optional)
  • DIJON DRESSING
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1/4 cup extra virgin olive oil

Method

  • Cut Brussels sprouts in half. Chargrill on both sides until charred and just tender, but still bright green.
  • Arrange on a platter. Season and drizzle with Dijon Dressing and honey. Sprinkle with almonds, fresh thyme and a little curry powder.
  • For the Dijon Dressing, shake all ingredients together in a jar to make a dressing.
  • VARIATION The dressing works well with charred asparagus or zucchini too.

Tips

  • TIPS Dijon dressing will keep refrigerated in a jar for a few weeks, so make double!
  • STYLING Tumble charred Brussels sprouts on the plate with some cut surfaces up and some down, before dressing and finishing with a sprinkling of curry powder and thyme.
  • DRINK MATCH Sauvignon blanc, riesling or crisp lager.
