Jamon-wrapped Asparagus with Mojo Verde

Tasty  and elegant, these are crowd-pleasing passarounds.

Cooking Time: 10 minutes

Ingredients

  • 12 asparagus spears
  • 4 slices jamon or prosciutto
  • extra virgin olive oil, as needed
  • coriander leaves and lime wedges, for garnish
  • MOJO VERDE
  • 1/2 cup roughly chopped coriander and stalks
  • 1-2 fresh Jalapeño or green chillies
  • 1 clove garlic, peeled
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sea salt
  • grated rind and juice of 1 lime

Method

  • Use a peeler to peel the woody stems of the asparagus and trim the ends. Place in a frypan with 1 cup water and simmer for 5 minutes until just tender. Refresh under cold water and drain. Toss in a little olive oil. Cut each jamon slice into 3 long strips and use the jamon strips to wrap around each asparagus spear. Serve drizzled with Mojo Verde and garnish with extra coriander and lime wedges.
  • MOJO VERDE Blend all the ingredients for the Mojo Verde, except the lime juice, and 1/4 cup olive oil, to a paste in a small blender. Add as much jalapeño as suits your taste. Just before serving, mix in 1 tablespoon lime juice and season to taste.

Tips

Jamon-wrapped Asparagus can also be lightly chargrilled before serving.
