Nonna’s Sugo for Pasta

Nonna's Sugo
Nonna’s recipe for home made sugo Abruzzese-style.

Makes:

1 litre

Prep Time: 10 minutes

Cooking Time: 2 hours

Ingredients

  • 1 cup pure olive oil
  • 2 lamb chump chops
  • 1 rasher pork belly
  • 2 pieces beef chuck steak
  • 1 tablespoon finely chopped onion
  • 1 small carrot, peeled
  • 1 slice red capsicum
  • 1/4 stalk celery
  • pinch dried mixed Italian herbs
  • 2 litres home made tomato passata

Method

Heat oil in a large pot and brown meat and onion. Add the remaining ingredients and bring to the boil. Simmer slowly, with the lid to one side, for 2 hours until reduced by half. Use for pasta asciutta or pasta al forno.

Tips

  • Usually, the sauce meat is removed from the sauce and served after the pasta dish, with a little salad.
  • If using store bought passata, reduce simmering time to 1 hour, covering if it thickens too much to allow the meat to cook.
