One Pot Paprika Chicken
This one pot wonder is full of flavour and goodness.
Serves:

Prep Time: 15 minutes
Cooking Time: 30 minutes
Ingredients
- 750g-1kg chicken thigh fillets, cut into three
- sea salt and freshly ground black pepper, to taste
- 1 tablespoon smoked paprika
- 1 tablespoon chopped fresh rosemary
- 3 tablespoons extra virgin olive oil
- 1 onion, diced
- 1 red capsicum, chopped
- 2 potatoes, peeled and diced
- 400g can butter beans, cannellini beans or chick peas
- 1/4 cup black olives, optional
- 2 cups tomato passata
- 80g baby spinach
Method
Season chicken with salt, pepper, paprika and rosemary. Heat 2 tablespoons oil and cook chicken until browned on both sides. Add onions, capsicum and potatoes and cook for 5 minutes, stirring, until onions have softened. Add beans, olives and passata and simmer covered for 20 minutes until potatoes are tender. Remove the lid and simmer until slightly thickened (you can crush a few potatoes with the back of a wooden spoon to help thicken the sauce). Season to taste and stir in remaining olive oil. Stir spinach in until wilted, just before serving. Serve with crusty bread
