Orange Almond Biscuits

Crunchy almond biscuits you can whip up in a flash.

Ingredients

  • 2 cups plain flour
  • 1 cup sugar
  • ¼ cup slivered almonds
  • ½ teaspoon bicarbonate of soda
  • pinch salt
  • grated rind of 1 orange
  • ¾ cup extra light olive oil
  • ¼ cup freshly squeezed orange juice
  • 1 teaspoon vanilla extract

Method

Combine flour, sugar, alomnds, bicarbonate of soda, salt and grated orange rind in a bowl. Make a well in the centre and mix in oil, orange juice and vanilla. Divide mixture into two and form into long rolls, 5cm wide. Use a serrated knife to carefully cut into 1cm thick rounds. Place onto oven trays, neatening the shape as you go, allowing 12 to a tray as they will spread. Bake at 180°C for 15 minutes until golden around the edges. Allow to cool on trays for 2 minutes before carefully removing onto wire racks to cool completely. Store in an airtight container.

Tips

•Substitute any other nut for almonds, such as pistachios, pine nuts and hazelnuts. •Lemon can also be used instead of orange.
