Patatas Bravas Ensalada (Spanish Potato Salad)
What happens when Patatas Bravas gets a salad makeover!

Ingredients
- 1 kg red-skinned baby new potatoes, unpeeled
- 1/4 cup extra virgin olive oil
- 1 red onion, cut into fine wedges
- 1 red capsicum, cut into strips
- 2 large cloves garlic, crushed
- sea salt, to taste
- 1 punnet cherry tomatoes, halved
- 1/2 cup stuffed green olives
- sherry vinegar or red wine vinegar, for drizzling
- smoked paprika, for sprinkling
- 1 bunch coriander
- SMOKED PAPRIKA DRESSING
- 1/2 cup good quality egg mayonnaise
- 2 tablespoons milk
- 2 teaspoons smoked paprika (sweet or hot)
Method
- Boil potatoes for 15-20 minutes until tender. Drain and cut in half. Heat oil in a frypan and sauté the onion, capsicum and garlic until golden brown, seasoning with salt. Add potatoes and olives and cook until heated through. Season with a little sherry vinegar. Arrange on a bed of coriander leaves. Drizzle with Smoked Paprika Dressing, sprinkle with extra smoked paprika and coriander leaves.
- SMOKED PAPRIKA DRESSING Shake all ingredients together in a jar and season to taste.
