Patatas Bravas Ensalada (Spanish Potato Salad)

What happens when Patatas Bravas gets a salad makeover!

Ingredients

  • 1 kg red-skinned baby new potatoes, unpeeled
  • 1/4 cup extra virgin olive oil
  • 1 red onion, cut into fine wedges
  • 1 red capsicum, cut into strips
  • 2 large cloves garlic, crushed
  • sea salt, to taste
  • 1 punnet cherry tomatoes, halved
  • 1/2 cup stuffed green olives
  • sherry vinegar or red wine vinegar, for drizzling
  • smoked paprika, for sprinkling
  • 1 bunch coriander
  • SMOKED PAPRIKA DRESSING
  • 1/2 cup good quality egg mayonnaise
  • 2 tablespoons milk
  • 2 teaspoons smoked paprika (sweet or hot)

Method

  • Boil potatoes for 15-20 minutes until tender. Drain and cut in half. Heat oil in a frypan and sauté the onion, capsicum and garlic until golden brown, seasoning with salt. Add potatoes and olives and cook until heated through. Season with a little sherry vinegar. Arrange on a bed of coriander leaves. Drizzle with Smoked Paprika Dressing, sprinkle with extra smoked paprika and coriander leaves.
  • SMOKED PAPRIKA DRESSING Shake all ingredients together in a jar and season to taste.
