Plum, Passionfruit and Ricotta Cake

An easy mix cake with a creamy ricotta centre topped with tangy plums and passionfruit.

Makes:

25cm round cake

Prep Time: 15 minutes

Cooking Time: 1 hour

Ingredients

  • 250g butter
  • 3/4 cup raw sugar
  • 2 cups self raising flour
  • 2 eggs
  • 250g fresh ricotta (from the wheel)
  • 1 teaspoon cinnamon
  • 500g fresh plums, cut into wedges
  • pulp of 2 passionfruit

Method

Melt the butter and sugar together either in the Microwave on Medium for 2 -3 minutes or in a saucepan until the butter has just melted. Mix in flour and eggs and pour into a lined 25cm springform tin. Crumble ricotta over the top of the cake batter, sprinkle with cinnamon and top with plums. Sprinkle with a little extra raw sugar. Bake at 180°C for around 1 hour until golden brown and the cake is cooked when tested with a skewer. Allow to stand for 5 minutes before turning out onto a cake rack to cool. Drizzle with passionfruit before serving.

Tips

Other fresh stonefruit or canned plums can be substituted (800g can).
