Classic Ham and Gruyere Quiche
When quiches are home baked with buttery puff pastry, good ham, cream and tasty Gruyere cheese, there is nothing better.

Cooking Time: 45 minutes
Ingredients
- 2 sheets frozen puff pastry, thawed
- 150g grated Gruyere or Raclette cheese
- 250g finely chopped smoked ham
- 1 spring onion, chopped, optional
- 6 eggs
- 3/4 cup cream
- 3/4 cup full cream milk
Method
Preheat oven to 180°C. Cut each sheet of pastry into four and use to line 8 x 10cm metal pie dishes, trimming the points and using them to fill the gaps. Prick base with a fork and fill with cheese, ham and spring onion. Using a fork, beat eggs, cream and milk together in a jug until well combined and pour into the quiches. Bake for 40-45 minutes, lowering to the base of the oven for the last 10 minutes to crisp the pastry, until puffed and golden. Carefully remove from tins and serve with salad.
Tips
Use smoked cheddar instead of gruyere.
