Rocket, Tomato and Pine Nut Salad

Sometimes all you need is a simple salad.

Serves:

4 Prep Time: 10 minutes

Ingredients

120g wild rocket leaves
1 punnet grape tomatoes, halved
1 tablespoon toasted pine nuts
HONEYED BALSAMIC DRESSING
1/4 cup extra virgin olive oil
1 tablespoon balsamic vinegar
1 clove garlic, crushed
1 teaspoon honey

Method

Shake all the ingredients for the dressing together in a screwtop jar. Arrange rocket and tomatoes in a serving bowl, drizzle with dressing and serve sprinkled with pine nuts.
