Sesame Carrots with Mandarin Juice
Carrots will never be boring again if you roast them, spice them and dress them this way, with a squeeze of fresh mandarin or a juicy orange.
Serves:
4-6
Prep Time: 10 minutes
Cooking Time: 20 minutes
Ingredients
- 2 bunches Dutch carrots
- extra virgin olive oil, for drizzling
- sea salt and pepper, to taste
- smoked paprika, for sprinkling
- 50g wild rocket
- 1 large mandarin or small orange, squeezed
- 2 teaspoons toasted sesame seeds
Method
- Trim the tops of the carrots and scrub well. Place onto an oven tray and drizzle with oil, sprinkle with salt and smoked paprika, and roast at 200°C for 20 minutes until tender.
- Arrange rocket on a serving plate and top with roasted carrots.
- Drizzle with mandarin juice and olive oil, and serve sprinkled with sesame seeds and extra paprika.
- VARIATION Use a sprinkle of dukkah instead of sesame seeds.
Tips
- TIPS Look out for the heirloom bunches of rainbow Dutch carrots that come in purple, orange, yellow and white.
- STYLING Keep the tops of the carrots on for a great look.
- DRINK MATCH Riesling or fruited sour ale.
