Smoked Almond Chocolate Crack

Christmas Crack
My version of this viral recipe for Chocolate Crack. Beware...it is addictive!

Ingredients

  • 36-40 Salada™ crackers
  • 250g unsalted butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 200g block dark chocolate, chopped
  • 1 cup smoked almonds or nuts of choice, chopped
  • sea salt or coloured sugar crystals*, for sprinkling

Method

Line a 32 x 24cm Swiss roll tin (or similar) with foil and baking paper. Cover the base with crackers, trimming to fit as necessary. Melt butter and brown sugar together, stirring occasionally, then bring to the boil and simmer for 3 minutes to make caramel. Carefully pour over the crackers and bake at 180°C for 10 minutes. Remove from oven and sprinkle chocolate pieces on top. Allow to melt and spread with a spatula. Sprinkle with nuts and a little sea salt or sugar crystals and refrigerate until set. Break into pieces and store in an airtight container in the fridge.

Tips

  • TIP Try using pistachio nuts instead of smoked almonds, or for Christmas, add some dried cranberries or cherries to the chocolate.
  • TIP Chocolate Crack freezes really well either in a slab or broken into pieces.
  • STYLING Sprinkle with gold sugar crystals for a festive touch.
  • DRINK Pedro Ximenez Sherry or Port
