Sweet and Sour Red Cabbage, Green Apple and Currants

Sweet and tangy cabbage is a great accompaniment to duck, pork or sausages.

Cooking Time: 20 minutes

Ingredients

  • 1/4 cup currants
  • 1/4 cup apple cider vinegar
  • 2 tablespoons caster sugar
  • sea salt and pepper, to taste
  • extra virgin olive oil, as needed
  • 1 red onion, cut into thin slivers
  • 1/2 small red cabbage, shredded
  • 1 green apple, cut into thin wedges
  • 2 teaspoons caraway seeds

Method

Combine currants, vinegar, sugar and 1 teaspoon salt and allow to stand. Heat 1/4 cup oil and sauté onion until softened. Add cabbage, apple and caraway seeds and sauté for 5 minutes. Add currant mixture and simmer, covered for 10 minutes, stirring occasionally, until softened. Season to taste and serve drizzled with olive oil.
