Sweet Pea Soup with Minted Sour Cream

A bag of frozen peas can turn into a heartwarming soup in minutes.
Serves:
4
Prep Time: 10 minutes
Cooking Time: 20 minutes
Ingredients
- 1/4 cup sour cream
- 1/4 cup shredded mint
- sea salt and freshly ground black pepper, to taste
- 50g butter
- 1 large onion, finely diced
- 2 cloves garlic, crushed
- 1 kg frozen peas
- 2 cups chicken stock
- 1 cup milk
- extra virgin olive oil, for drizzling
- mint leaves, for garnish.
Method
Combine sour cream with mint and 1 teaspoon salt and allow to stand while making soup. Melt butter in a pot and cook onion and garlic over low heat for 10 minutes until very soft. Add peas, stock and 1 teaspoon salt and bring to the boil. Simmer covered for 10 minutes then puree until smooth, using a handheld blender. Add milk, season to taste and reheat if required. Serve soup in bowls, with a dollop of Minted Sour Cream and garnish with a drizzle of oil, sprinkle of pepper and mint leaves.
