Torn Bread Pudding

Leftover bread turns into a comforting dessert.

Ingredients

  • 4 cups torn bread (French or Italian style bread)
  • 1/4 cup currants
  • 50g dark chocolate, chopped or choc bits
  • 3 eggs
  • 1/4 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups milk
  • 50g butter, melted
  • cinnamon, for sprinkling

Method

Arrange bread in a baking dish and sprinkle evenly with currants and chocolate. Whisk eggs, sugar and vanilla together with a fork and mix in milk. Pour over bread, drizzle with butter and sprinkle with cinnamon. Bake at 180°C for 25-20 minutes until custard is set and bread is golden. Serve with cream or ice cream.

Tips

  • Substitute currants with chopped dried apricots and white chocolate for dark.
  • Use 1 punnet blueberries in place of currants and chocolate.
