Winter Lentil Soup

A hearty and nourishing soup to warm you up right down to your bones.

Cooking Time: 45 minutes

Ingredients

  • extra virgin olive oil, as needed
  • 2 onions, diced
  • 4 cloves garlic, chopped
  • 2 large carrots, peeled and diced
  • 2 stalks celery and leaves, diced
  • 1 teaspoon ground cumin
  • 500g green lentils, rinsed
  • 400g can peeled tomatoes, chopped
  • 1 litre beef, chicken or vegetable stock
  • 1 litre water
  • 1 bay leaf
  • 1/2 cup continental parsley leaves

Method

Heat 1/4 cup oil in a large pot and sauté the onion and garlic until softened. Add carrots, celery and cumin and cook, stirring for 5 minutes. Add lentils, tomatoes, stock, water, bay leaf and another 1/4 cup oil and bring to the boil. Simmer for 45 minutes until lentils are tender. Remove bay leaf and season to taste. Stir in half the parsley. Serve in bowls with a drizzle of olive oil, garnished with remaining parsley.
