Wok Smoked Chicken

Smoking your own chicken fillets to infuse them with flavour, is surprisingly quick and easy when you know how. You will need a wok with a lid and a steaming basket or rack that fits it.

Makes:

2 chicken fillets

Prep Time: 15 minutes (plus refrigeration time)

Cooking Time: 30 minutes

Ingredients

  • 2 large chicken fillets, skinned
  • SPICE RUB
  • 1 tablespoon paprika
  • 2 teaspoons brown sugar
  • 2 teaspoons dried thyme
  • 2 teaspoons sea salt
  • SMOKING MIX
  • 1/2 cup white rice
  • 1/2 cup brown sugar
  • 1/2 cup black tea leaves
  • 1 tablespoon cardamom pods
  • few strips orange peel

Method

Place the chicken uncovered on a rack in the fridge for at least 1/2 hour and up to 2 hours. Combine ingredients for the Spice Rub and use to coat chicken. To prepare the wok, line completely with 4-5 layers of foil, letting them overhang. Place the Smoking Mix at the bottom of the wok and position a rack and/or steamer basket on top, so it is suspended above the mix. Place the chicken on the rack/steamer basket and cover with the wok lid (or use foil). Press wet tea towels around the edge where the lid meets the wok, to contain the smoke. Fold up the overhanging foil to help seal it further. Place wok over high heat until smoke appears, then reduce to a medium heat and allow to smoke for 30 minutes. Carefully remove from the wok, discarding the foil and smoking mix. Serve chicken hot or cold.

Tips

SMOKED TOFU Tofu can also be smoked as above. There is no need to refrigerate it uncovered to begin with and 15-20 minutes smoking time is sufficient.
