Yiayia’s Christmas Cake

This is my Mum's light fruitcake that is full of walnuts and glacé fruit.

Makes:

1 x 25cm round cake or 3 rectangular bar cakes (25cm x 12.5cm)

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 125g mixed peel or chopped dried apricots
  • 125g walnut halves
  • 150g currants or sultanas
  • 250g glacé apricots, chopped
  • 45g glacé ginger chopped
  • grated rind of 1 lemon and 1 orange
  • 2 cups plain flour
  • 1/2 teaspoon baking powder
  • 250g unsalted butter, softened
  • 1 cup caster sugar
  • 5 large eggs
  • 2 tablespoons fresh orange juice

Method

Butter and line baking tin/s. Combine mixed peel, walnuts, currants, apricots, ginger, lemon and orange rind together and mix in ½ cup flour to coat. Mix in remaining flour and baking powder. Cream butter and sugar together until light and fluffy, add eggs one at a time and mix in orange juice. Fold flour into fruit mixture until combined. Spoon into the prepared tin/s. Bake at 160°C for 30-40 minutes or until golden and cooked when tested.

Tips

To decorate, mix 1 cup icing sugar with a few teaspoons of boiling water to make a simple icing and working quickly, drizzle the cake with the warm icing. It will set on cooling. If it cools while using it, microwave for 10-20 seconds. Then decorate with chopped glacé ginger or dried fruit and walnuts
