Zucchini, Pea and Feta Fritters

Tasty zucchini and feta fritters that work for breakfast, entree, mezze or a snack. This recipe makes 6 fritters but can be easily doubled.

Cooking Time: 10 minutes

Ingredients

  • 1 large zucchini, grated
  • 1/2 cup frozen peas
  • 1 spring onion, chopped
  • 1 tablespoon fresh thyme leaves
  • 1/2 cup self-raising flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 100g feta cheese, crumbled
  • extra light olive oil, for frying
  • 1 small tomato, chopped
  • sriracha mayonnaise or chilli sauce, for serving

Method

  • Combine zucchini, peas, spring onion, thyme, flour, salt, eggs and half the feta together.
  • Shallow fry large tablespoonsful of mixture in hot oil in a frypan until golden on both sides. Drain on absorbent paper.
  • Serve topped with tomato, remaining feta, extra thyme leaves and a drizzle of sriracha mayonnaise.

Tips

  • Use grated pumpkin instead of zucchini.
  • STYLING Stack fritters on top of each other, then top with tomato, feta and thyme before drizzling sriracha mayo onto the plate.
  • DRINKS Fresh green juice
