Zucchini, Pea and Feta Fritters
Tasty zucchini and feta fritters that work for breakfast, entree, mezze or a snack. This recipe makes 6 fritters but can be easily doubled.

Ingredients
- 1 large zucchini, grated
- 1/2 cup frozen peas
- 1 spring onion, chopped
- 1 tablespoon fresh thyme leaves
- 1/2 cup self-raising flour
- 1/2 teaspoon salt
- 2 eggs
- 100g feta cheese, crumbled
- extra light olive oil, for frying
- 1 small tomato, chopped
- sriracha mayonnaise or chilli sauce, for serving
Method
- Combine zucchini, peas, spring onion, thyme, flour, salt, eggs and half the feta together.
- Shallow fry large tablespoonsful of mixture in hot oil in a frypan until golden on both sides. Drain on absorbent paper.
- Serve topped with tomato, remaining feta, extra thyme leaves and a drizzle of sriracha mayonnaise.
Tips
- Use grated pumpkin instead of zucchini.
- STYLING Stack fritters on top of each other, then top with tomato, feta and thyme before drizzling sriracha mayo onto the plate.
