Chorizo Cauliflower Cheese
Make a meal of cauliflower cheese with the addition of spicy chorizo and smoked cheddar.

Ingredients
- 1 cauliflower, cut into florets
- olive oil, as needed
- 1 large onion, sliced
- 2 Spanish chorizo, sliced
- 80g butter
- 1/2 cup plain flour
- 3 cups milk
- 1 cup grated smoked cheddar
- sea salt and pepper, to taste
- 1 large ripe tomato, diced
- 1/2 cup panko breadcrumbs
- paprika, for sprinkling
Method
- Boil cauliflower in a large pot of salted water for 5 minutes, drain.
- Heat 1 tablespoon oil in a frypan and fry onion and chorizo until golden brown.
- Melt butter in the pot, add flour and cook, stirring for 1 minute. Add milk all at once and bringing to the boil, whisking until smooth and thickened. Stir in chorizo, onion and half the cheddar. Season to taste.
- Spoon into a buttered ovenproof serving dish and sprinkle with remaining cheddar and breadcrumbs. Drizzle with oil and bake at 200°C for 20-30 minutes until golden brown. Serve sprinkled with paprika.
Tips
- Any type of sausage or salami can be substituted for the chorizo. Use roast capsicum for a vegetarian alternative.
- STYLING Keep the florets whole for best presentation.
