Mixed Nut and Apple Banana Cake Bars

A quick mix batter to that turns into cute little cake bars flavoured with banana, apple and mixed nuts.

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • olive oil spray
  • 2 large ripe bananas, peeled
  • 2 eggs
  • 1 apple, unpeeled, grated
  • 1 cup brown sugar
  • 1/3 cup extra light olive oil
  • 1 ½ cups self-raising flour
  • 2 teaspoons cinnamon
  • 1/2 cup chopped mixed nuts

Method

  • Spray 12 petite loaf pans or large muffin pans, with olive oil Turn out onto a wire rack to cool and serve warm cut into slices or serve toasted with butter.
  • Mash bananas in a large bowl and mix in eggs, apple, brown sugar and oil. Fold in flour and cinnamon. Spoon evenly into pans and sprinkle with nuts.
  • Bake at 180°C for 20-30 minutes until golden brown and cooked when tested.
  • Use a palette knife to loosen the edges and stand for 5 minutes before carefully turning out onto a wire rack to cool.

Tips

  • These freeze very well for up to 3 months. Wrap individually in plastic wrap and seal in a freezer bag.
  • STYLING Use unsalted mixed nuts and chop coarsely by hand, rather than store-bought chopped nuts.
