Mixed Nut and Apple Banana Cake Bars
A quick mix batter to that turns into cute little cake bars flavoured with banana, apple and mixed nuts.

Ingredients
- olive oil spray
- 2 large ripe bananas, peeled
- 2 eggs
- 1 apple, unpeeled, grated
- 1 cup brown sugar
- 1/3 cup extra light olive oil
- 1 ½ cups self-raising flour
- 2 teaspoons cinnamon
- 1/2 cup chopped mixed nuts
Method
- Spray 12 petite loaf pans or large muffin pans, with olive oil Turn out onto a wire rack to cool and serve warm cut into slices or serve toasted with butter.
- Mash bananas in a large bowl and mix in eggs, apple, brown sugar and oil. Fold in flour and cinnamon. Spoon evenly into pans and sprinkle with nuts.
- Bake at 180°C for 20-30 minutes until golden brown and cooked when tested.
- Use a palette knife to loosen the edges and stand for 5 minutes before carefully turning out onto a wire rack to cool.
Tips
- These freeze very well for up to 3 months. Wrap individually in plastic wrap and seal in a freezer bag.
- STYLING Use unsalted mixed nuts and chop coarsely by hand, rather than store-bought chopped nuts.
