Chorizo Cauliflower Cheese

Make a meal of cauliflower cheese with the addition of spicy chorizo and smoked cheddar.

Ingredients

  • 1 cauliflower, cut into florets
  • olive oil, as needed
  • 1 large onion, sliced
  • 2 Spanish chorizo, sliced
  • 80g butter
  • 1/2 cup plain flour
  • 3 cups milk
  • 1 cup grated smoked cheddar
  • sea salt and pepper, to taste
  • 1 large ripe tomato, diced
  • 1/2 cup panko breadcrumbs
  • paprika, for sprinkling

Method

  • Boil cauliflower in a large pot of salted water for 5 minutes, drain.
  • Heat 1 tablespoon oil in a frypan and fry onion and chorizo until golden brown.
  • Melt butter in the pot, add flour and cook, stirring for 1 minute. Add milk all at once and bringing to the boil, whisking until smooth and thickened. Stir in chorizo, onion and half the cheddar. Season to taste.
  • Spoon into a buttered ovenproof serving dish and sprinkle with remaining cheddar and breadcrumbs. Drizzle with oil and bake at 200°C for 20-30 minutes until golden brown. Serve sprinkled with paprika.

Tips

  • Any type of sausage or salami can be substituted for the chorizo. Use roast capsicum for a vegetarian alternative.
  • STYLING Keep the florets whole for best presentation.
  • DRINK Chardonnay or Pale ale
