Prep Time: 15 minutes

Cooking Time: 20 minutes

Ingredients

  • 1 slice bread, crusts removed
  • 2 tablespoons milk
  • sea salt and pepper, to taste
  • 500g beef mince
  • 1 egg
  • 1 small onion, grated
  • 1/4 cup chopped continental parsley
  • 2 tablespoons chopped mint
  • olive oil, as needed
  • CHARRED CAPSICUM RELISH
  • 1 red capsicum
  • 2 cloves garlic, peeled
  • 1/4 cup continental parsley leaves
  • 2 teaspoons pomegranate molasses or balsamic glaze

Method

  • Place bread and 2 teaspoons salt in a large bowl and soak in milk until softened, then crumble with your fingers. Add mince, egg, grated onion, parsley and mint and mix until well combined. Form into 8 patties.
  • To char-grill, lightly oil the patties and cook on a hot char-grill pan or bbq for 4-5 minutes until well charred then trun over and cook a further 2 minutes for medium or until done to your liking. Serve with Charred Capsicum Relish.
  • CHARRED CAPSICUM RELISH Place capsicum directly over a gas flame or bbq, turning occasionally until the skin is blackened all over. Wrap in foil and allow to cool before rubbing off the skin and removing the seeds. Using a large cook’s knife, chop capsicum, garlic, parsley and 1 teaspoon salt together on a board, until very finely chopped. Spoon into a bowl and mix in pomegranate molasses. Season to taste.

Tips

  • Pork or lamb mince can be used in place of beef.
  • STYLING Overlap the keftedes onto a large plate and dollop a few with relish. Sprinkle with parsley or mint leaves.
  • DRINK Beer or Retsina
