Apple Raspberry Crumble

This is the ultimate comfort food dessert for a cold Winter's evening, and mine contains a burst of raspberries that reminds me of warmer days!

Cooking Time: 40 minutes

Ingredients

  • 6 Granny Smith apples, peeled, cored, cut into wedges*
  • 1 tablespoon brown sugar
  • 1 tablespoon water
  • 1/2 cup fresh or frozen raspberries
  • 1/2 cup self raising flour
  • 1/3 cup rolled oats
  • 1/4 cup brown sugar, extra
  • 1/4 cup coconut
  • 1 teaspoon cinnamon
  • 125g butter, cubed
  • 2 tablespoons flaked or slivered almonds

Method

Combine apples, brown sugar and water in a microwave safe bowl, cover with plastic wrap and microwave on High for 7-8 minutes, until soft. Drain and arrange in a pie dish, with raspberries. Combine flour, oats, extra brown sugar, coconut and cinnamon together and rub in butter using your fingertips until mixture is crumbly. Stir in almonds and sprinkle crumble onto the top of fruit and bake at 200°C for 20-30 minutes until golden brown. Serve with vanilla ice cream.

Tips

* Use 1 x 800g can pie apple combined with brown sugar, instead of cooking fresh apples, and omit water.
