Apple Strudel Muffins
A perfect melding of apple strudel flavours in the convenience of a muffin. Once you've mastered this version, try the Blackforest or Bananaberry alternatives!

Cooking Time: 30 minutes
Ingredients
- MUFFINS
- 2 cups plain flour
- 1 tablespoon baking powder
- 2 teaspoons cinnamon
- 3/4 cup dark brown sugar
- 1 1/2 cups (400g) pie apple
- 1/2 cup sultanas
- 1/2 cup chopped walnuts
- 125g butter, melted
- 2 eggs
- 3/4 cup milk
- CINNAMON TOPPING
- 50g butter, melted
- 1 tablespoon caster sugar
- 2 teaspoons cinnamon
Method
- Combine all ingredients together in the above order. Spoon into 12 buttered muffin pans (or paper muffin cases) and bake at 180°C for 30-35 minutes or until golden brown. Brush with melted butter and sprinkle with caster sugar combined with cinnamon. Remove from pans. Serve warm or allow to cool on a wire rack before storing in an airtight container.
- BLACKFOREST MUFFINS Replace 1/4 cup flour with cocoa, 400g drained black cherries for pie apple, 1/2 cup choc chips for sultanas and 1 teaspoon vanilla essence for cinnamon. Omit walnuts and proceed as above.
- BANANABERRY MUFFINS Replace apples, sultanas and walnuts with 1 mashed banana, 1 punnet raspberries or blueberries and 1/4 cup desiccated coconut.
