Avocado, Tuna and Pine Nut Spaghetti

A quick and easy spaghetti dish with creamy avocado, tasty tuna and the crunch of pine nuts.

Serves:

Prep Time: 10 minutes

Cooking Time: 30 minutes

Ingredients

  • 250g spaghetti or fettuccine
  • 50g butter
  • 2 spring onions, chopped
  • 300ml bottle cream
  • 185g can tuna in olive oil
  • 1 avocado, diced
  • juice of 1 lemon
  • 2 tablespoons chopped dill and/or continental parsley, and extra for garnish
  • sea salt and pepper, to taste
  • 1 tablespoon toasted pine nuts

Method

  • Boil spaghetti in a large pot of salted boiling water until ‘al dente’ and drain, reserving 1 cup pasta water.
  • Melt butter in pot and sauté spring onions until softened. Add cream and oil from tuna, bring to the boil and simmer until saucy. Toss in spaghetti and a little pasta water if needed.
  • Stir in avocado, tuna, dill, lemon juice and chopped dill. Season to taste.
  • Portion into bowls and serve sprinkled with pine nuts and dill sprigs.
