Spanakaroni

Spanakopita meets macaroni cheese!

Ingredients

  • 500g macaroni pasta, penne, spirali or small rigatoni
  • sea salt and pepper, to taste
  • 80g butter
  • 1/2 cup plain flour
  • 1 litre milk
  • 1 cup grated vintage cheddar
  • 4 spring onions, chopped
  • 120g baby spinach
  • 1/2 cup chopped parsley
  • 200g feta cheese
  • 1/2 cup panko breadcrumbs
  • extra virgin olive oil, for drizzling

Method

  • Cook pasta in a large pot of salted boiling water until just ‘al dente’ and drain.
  • Melt butter in pot, add flour and cook, stirring for 1 minute. Add milk all at once and whisk until smooth and mixture boils and thickens. Mix in cheddar until melted and season to taste. Turn off the heat and stir in spring onions, spinach and parsley until spinach has wilted.
  • Spoon into individual gratin dishes or a lasagne dish. Crumble feta on top, sprinkle with breadcrumbs and pepper, drizzle with oil and bake at 200°C for 20-30 minutes until golden brown.

Tips

  • Dish can be assembled in advance and refrigerated 24 hours before, then baked.
  • STYLING Break feta into a variety of large rocky pieces and crumbles before sprinkling on top.
  • DRINK Chardonnay
