Balsamic Oysters with Avocado and Prosciutto Flakes
Jazz up your oysters with this colourful and tasty topping.

Prep Time: 10 minutes
Ingredients
- 2 slices prosciutto
- 1 tablespoon extra virgin olive oil
- 2 teaspoons balsamic vinegar
- 12 oysters
- 1/2 avocado, finely diced
- snipped chives, for garnish
Method
Place prosciutto on a baking paper lined oven tray and bake at 200°C for 5-8 minutes until crisp.
Allow to cool and crumble into flakes.
Combine oil and vinegar together. Arrange oysters on a platter and drizzle each with ½
teaspoon oil and vinegar mixturel. Top oysters with avocado,
sprinkle with prosciutto flakes and snipped chives.
Tips
The same topping can be used on scallops on the half shell, just bake for 5 minutes until the scallops are just cooked.
