Chilli Prawns with Avocado in Cos Leaves
A great way to serve prawns as a pass-around.

Ingredients

  • 1/4 cup extra light olive oil
  • 1/4 teaspoon chilli flakes
  • 1/2 teaspoon sea salt
  • 12 baby cos lettuce leaves
  • 1 avocado, sliced
  • 12 peeled cooked King prawns, tails intact
  • 1 lime, halved
  • 2 tablespoons crispy fried shallots
  • coriander leaves, for garnish

Method

Combine oil, chilli and salt together and allow to infuse for at least 10 minutes. Arrange cos leaves on a platter. Nestle sliced avocado and one prawn in each leaf. Drizzle with the juice of ½ lime and chilli oil. Sprinkle with fried shallots and served garnished with coriander leaves and the remaining lime cut into wedges.

Tips

Turn this into a great salad by adding 1 sliced cucumber and tearing the lettuce, before layering everything into a salad bowl.
