Banana Bread with Maple Butter
This simple to make banana bread is extra delicious with a spread of spiced maple butter.

Cooking Time: 40 minutes
Ingredients
- olive oil spray
- 2 large ripe bananas, peeled
- 2 eggs
- 1/3 cup extra light olive oil
- 1 cup dark brown sugar
- 1 ½ cups self-raising flour
- 3 teaspoons mixed spice
- raw sugar, for sprinkling
- 100g unsalted butter, softened
- 2 tablespoons maple syrup
Method
Spray a loaf pan with oil and line with baking paper. Mash bananas in a large bowl and mix in eggs and oil. Stir in brown sugar. Fold in flour and 2 teaspoons mixed spice. Sprinkle with raw sugar. Pour into loaf pan and bake at 180°C for 30-40 minutes until golden brown and cooked when tested. Meanwhile, mix softened butter with a spoon until lightly whipped, then mix in maple syrup and remaining mixed spice to make Maple Butter. Turn out onto a wire rack to cool and serve warm cut into slices spread with Maple Butter or serve toasted.
Tips
•Add 2/3 cup dried cranberries, sultanas, dried apricots, frozen blueberries or choc chips for variety.
•Substitute bananas with 1 cup pie apple.
