Greek Zucchini Bake
Yiayia Mimi's recipe for Kolokithia Me Tiri (Zucchinis with Cheese) - a layered zucchini, tomato and parmesan cheese bake.

Ingredients

  • 1/2 cup plain flour
  • 2 teaspoons dried Greek oregano
  • sea salt and freshly ground black pepper, to taste
  • 750g large zucchini, trimmed
  • extra light olive oil or vegetable oil, for shallow frying
  • 1 kg ripe tomatoes
  • 100g grated parmesan cheese
  • 6 eggs
  • 1 cup regular milk
  • extra oregano, for sprinkling

Method

Combine flour, oregano, 1 teaspoon salt and 1/2 teaspoon pepper together. Cut zucchini lengthwise into thin slices, coat in flour and shallow fry in hot oil until golden on both sides. Drain on absorbent paper. Meanwhile, add tomatoes to a pot of boiling water, boil for 1 minute, drain and peel off skins. Cut into slices, discarding seeds. Arrange half the fried zucchini on the base of a lasagne dish, sprinkle with half the cheese, then top with tomatoes, season with salt and pepper and layer with remaining zucchini and cheese. Lightly beat eggs and milk together and pour over vegetables. Sprinkle with oregano. Bake at 180°C for 30 minutes until golden brown.
