Banana-Mi-Su
This is what happens when Tiramisu meets Banana Cream Pie!
Serves:
8
Prep Time: 30 minutes (plus 2 hours refrigeration)
Cooking Time: 10 minutes
Ingredients
- 4 ripe bananas
- 3/4 cup milk
- 2 tablespoons Galliano liqueur
- 200g small savoiardi sponge finger biscuits
- 1/4 cup dark brown sugar
- cinnamon, for sprinkling
- 600ml cream, whipped
- 1 cup toasted flaked coconut
- VANILLA CUSTARD
- 1 cup sugar
- 1/4 cup cornflour
- 3 cups milk
- 2 teaspoons vanilla extract
- 2 eggs, lightly beaten
- 50g butter
Method
- Slice bananas and mix into the cooled custard. Combine milk and Galliano together. Dip biscuits into Galliano mixture and arrange in the base of a rectangular dish. Top with banana custard, sprinkle with brown sugar and cinnamon. Cover and refrigerate for 1-2 hours. Top with spoonfuls of whipped cream and garnish with coconut just before serving.
- VANILLA CUSTARD Combine sugar and cornflour in a saucepan and whisk in milk and vanilla. Bring to the boil, stirring until thickened. Mix 1 cup custard into eggs and return to the saucepan with the butter and cook, stirring for 2 minutes. Turn off the heat. Cover the surface of the custard with plastic wrap or baking paper and allow to cool.
