Banana-Mi-Su

This is what happens when Tiramisu meets Banana Cream Pie!

Prep Time: 30 minutes (plus 2 hours refrigeration)

Cooking Time: 10 minutes

Ingredients

  • 4 ripe bananas
  • 3/4 cup milk
  • 2 tablespoons Galliano liqueur
  • 200g small savoiardi sponge finger biscuits
  • 1/4 cup dark brown sugar
  • cinnamon, for sprinkling
  • 600ml cream, whipped
  • 1 cup toasted flaked coconut
  • VANILLA CUSTARD
  • 1 cup sugar
  • 1/4 cup cornflour
  • 3 cups milk
  • 2 teaspoons vanilla extract
  • 2 eggs, lightly beaten
  • 50g butter

Method

  • Slice bananas and mix into the cooled custard. Combine milk and Galliano together. Dip biscuits into Galliano mixture and arrange in the base of a rectangular dish. Top with banana custard, sprinkle with brown sugar and cinnamon. Cover and refrigerate for 1-2 hours. Top with spoonfuls of whipped cream and garnish with coconut just before serving.
  • VANILLA CUSTARD Combine sugar and cornflour in a saucepan and whisk in milk and vanilla. Bring to the boil, stirring until thickened. Mix 1 cup custard into eggs and return to the saucepan with the butter and cook, stirring for 2 minutes. Turn off the heat. Cover the surface of the custard with plastic wrap or baking paper and allow to cool.
