Cheddar, Sweetcorn and Bacon Muffins
Sweet corn, cheddar and bacon in a muffin for lunchboxes and picnics!

Prep Time: 10 minutes

Cooking Time: 20 minutes

Ingredients

  • 2 cups grated cheddar cheese
  • 2 cups self-raising flour
  • 1 cup creamed corn
  • 2 eggs
  • 1/2 cup milk
  • 3 rashers bacon, diced and fried until crisp
  • 1 tablespoon snipped chives
  • 2 teaspoons french mustard

Method

Combine all ingredients together in the above order and spoon into 12 buttered non-stick muffin pans. Bake at 200°C for 15-20 minutes until golden brown. Remove onto a wire rack to cool slightly. Serve warm or cold.

Tips

These muffins can be frozen in a sealed freezer bag for up to 3 months.
