Choc-Banana Peanut Butter Blondies

The big flavours of banana, chocolate and peanut butter make these blondies (sisters to the brownie) to die for!

Makes:

1 x 18cm x 28cm slab tin

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients

  • 125g butter, melted
  • 1 cup caster sugar
  • 2 ripe bananas, mashed
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 cup plain flour
  • 150g dark chocolate, broken into squares
  • 1/4 cup crunchy peanut butter
  • cocoa, for dusting

Method

Butter and line a 18cm x 28cm slab tin with baking paper. Melt butter in a large glass mixing bowl in the microwave on Medium for 1-2 minutes and mix in sugar. Mix in bananas, vanilla and eggs until well combined. Fold in flour and spoon into tin. Dot mixture with squares of chocolate and teaspoons of peanut butter. Bake at 180°C for 25-30 minutes until just cooked (brownies should be slightly springy in the centre). Allow to cool in the tin. Dust with cocoa and serve cut into squares.
