Christmas Biscotti

The colours of Christmas shine in these crisp biscotti that will look beautiful in the cookie jar or as edible gifts.

Ingredients

  • 3/4 cup caster sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups plain flour
  • 1 teaspoon baking powder
  • 1/2 cup red glacé cherries
  • 1/2 cup chopped glacé or dried apricots
  • 1/2 cup glacé or dried pineapple pieces
  • 1/2 cup whole blanched almonds or macadamias

Method

  • Mix sugar, eggs and vanilla together in a bowl and stir in flour, baking powder, fruit and almonds.
  • Turn mixture out onto a floured board, divide in half and gently shape into 2 logs, 30cm long.
  • Transfer to a baking paper lined oven tray and bake at 180°C for 30 minutes until golden brown. Allow to cool on tray for 10 minutes.
  • Using a serrated or electric knife, cut diagonally into 5mm thick slices and lay flat on oven trays.
  • Bake at 150°C for 10 minutes, turn over and bake a further 10 minutes, until crisp. Allow to cool and store in an airtight container.

Tips

  • You can use a mixture of nuts in place of the fruit.
  • STYLING Take care to cut on a sharp angle and even thickness.
