Little Christmas Pudding Truffles

A cinch to make, these will add a special finishing touch to your Christmas festivities.

Makes:

Prep Time: 30 minutes (plus 30 minutes refrigeration time)

Cooking Time: 5 minutes

Ingredients

  • 100g dark chocolate, chopped
  • 50g butter
  • 800g store-bought dark fruit cake
  • 2 tablespoons brandy or port
  • 1 teaspoon cinnamon
  • 200g white chocolate, chopped
  • coloured sugar, sprinkles or glacé cherries, for decoration

Method

  • Melt chocolate and butter together in a bowl in the Microwave on Medium for 2 minutes, stirring halfway, until melted, or alternatively, melt in a bowl over simmering water.
  • Crumble fruit cake onto the chocolate, add brandy and cinnamon, and mix together using your hand. Roll tablespoonsful of mixture into balls and refrigerate for 10 minutes.
  • Melt white chocolate in the Microwave, as above, until smooth.
  • Working quickly, spread a teaspoon of white chocolate onto the top of each truffle.
  • Decorate with coloured sugar, sprinkles or cherries and place in little paper truffle cases, if desired.
  • Refrigerate for at least 15 minutes until chocolate sets. May be made up to 1 week in advance.

Tips

  • Use a little vanilla essence instead of brandy for a non-alcoholic version.
  • STYLING Use a palette knife to swirl the chocolate on top.
